New iteration of the Don Julio, our wild gose aged in Sotol barrels, a Mexican spirit similar to Tequila, distilled from the leaves of Dasylirion Wheeleri.
This version is a blend of wild gose beers fermented with Brettanomyces yeast and lactic bacteria, aged in Sotol barrels, then conditioned together on pineapple wedges and cranberry pomace.
A funky and fruity beer that breaks the mold, with the warm presence of Sotol and a salty finish brought by the addition of Saint Laurent Salt from the northern coast.
