The EMPYRUS cider, born from the union of Empire apples from Coteau St-Paul and Beauty Flamande pears (Pyrus communis), showcases the best of these two fruits grown on the south side of Mont Yamaska.
To create this fine nectar, pears from Gibb Farm are used in two stages. First, they are pressed, and their must is concentrated using cold methods.
Separately, the pear pomace is blended with the apple must throughout the fermentation process.
Once this maceration is complete, the pear must is incorporated to highlight the aromatic freshness of the golden fruit.
Let yourself be enchanted by the delicate floral notes of EMPYRUS and the budding finesse of the terroir from Coteau St-Paul.
