NEIPA hopped with Nelson Bliss, Galaxy, Citra and Nelson Sauvin.
This is a first time for our trying out Nelson Bliss, which is a Nelson Sauvin harvested late. This method was developed to capture all the tropical intensity of the hops, while preserving the citrus and white wine notes of an early harvest Nelson Sauvin. The objective is to maximize the free thiols (sweet tropical characters) present in Nelson Sauvin harvested very late, without losing the liveliness provided by the terpenes, often lost in these batches. This Nelson therefore brings more fruity notes, of guava, sweet lime and nectarine.
Brewery notes: On the nose, we find a mix of exotic fruits with a touch of white wine. The texture is very creamy. Citrus fruits dominate with lime and grapefruit, followed by guava and lychee, and finally we find a little redcurrant, green grape and white wine. The finish is rather dry, with medium bitterness. The aromatic intensity persists for a long time.
